DeNysschen Honored as Outstanding Dietetics Educator

Carol A. DeNysschen, associate professor of dietetics and nutrition, received the Western New York Outstanding Dietetic Educator of the Year Award from the Western New York Dietetic Association. The award recognizes the teaching, mentoring, and leadership activities of faculty and preceptors in dietetic education programs that have been accredited by the Commission on Accreditation for Dietetics Education.

DeNysschen, a registered dietitian, oversees clinical nutrition courses offered in the Buffalo State dietetics program, at the Erie County Medical Center and Women and Children’s Hospital of Buffalo. She also enjoys teaching an introductory nutrition course because it allows her to inspire students to “take an interest in their own health by being informed consumers.”

Her research interests include the influence of diet and exercise on chronic disease; exercise and nutrition in cancer treatment and post-cancer recovery; and the effect of exercise in health and health behaviors.

"I am very fortunate to have a passion for teaching, and I find it rewarding to see students progress and mature in this discipline," said DeNysschen. "Dietetics isn't an easy major but I find that through commitment to their coursework, the students evolve into strong, confident professionals. I love the challenge of introducing new teaching aids into the classroom that foster student learning. It is my honor to be recognized for the part I play in their learning."
