Campus House Chef Shares Culinary Observations from Ireland

Steve Burgeson, lecturer in the Hospitality and Tourism Department, will share his travel experiences and culinary observations from visiting Ireland in March 2017. The presentation, “Irish Cuisine: Thyme Has Changed,” will be held Thursday, October 26, from 12:15 to 1:30 p.m. in Caudell Hall’s foyer (Statler Foundation Room).

Burgeson’s talk marks the second presentation of the fall “Artists on the Road: Travel as Source of Inspiration” series.

He’ll talk about the style of food that is quickly giving the Emerald Isle a reputation for excellence in both traditional and modern cuisine and will include a cooking demonstration from a Roghchlár samplach (sample menu).

“I was able to spend a semester in London as a student; it was transformational for me,” said Burgeson. “Now it’s a privilege to have the experience as a teacher with our students.”

Prior student trips have included Northern Italy (Florence, Bologna, Milan, and Cuneo) that focused on the slow food movement, as well as Rome and Athens. 

Burgeson, who received his master’s degree in education from the University at Buffalo, avidly studies the multicultural and diverse aspects of hospitality, as well as prevailing culinary trends. Certified as a sous chef in the American Culinary Federation in 1989, he serves as the faculty chef in Buffalo State’s Campus House, an innovative hands-on teaching and research laboratory for students. He also is the adviser to the student chapter of the National Society of Minorities in Hospitality and has been a co-adviser to the Club Managers Association of America. 

He has more than 30 years of professional culinary experience, including with the Adam’s Mark Hotel, the Brookfield Golf and Country Club, and Just Pasta. Burgeson received the students’ award for the Promotion of Respect for Diversity and Individual Differences in 2003.
